Barajas Añejo is a tequila made from agave grown in Jalisco and aged for 28 months in new American oak. Barajas was founded by Gerardo Barajas in 1997, and the house uses a method called desfibrador, which encourages oxygenation and the extraction of the pulp.
Every bottle is made by hand by a Mexican artisan, who signs the base of it.
The nose brings toasted caramel, cinnamon, lemon and vanilla. The palate is herbal and earthy, with cooked agave, pepper and caramel, and it closes on a lightly citrus finish with a mineral note underneath.
