Barajas Extra Añejo (70cl)

Barajas Extra Añejo is a tequila from the brand founded by Gerardo Barajas in 1997, who trained as a maestro tequilero after working alongside the master distiller of other well-known tequilas. The house uses its own method, called desfibrador, which encourages oxygenation and the extraction of the agave pulp. Production is kept very small, and every bottle is made by hand by Mexican artisans, taking around ten days to make and seven hours to paint. Each carries the signature of the person who made it. It suits sipping neat, with a little chocolate alongside.
