Dovetail is a cask strength American whiskey from Barrell Craft Spirits, bottled at 62.2% in a 75cl bottle. It blends a 10-year-old whiskey finished in Dunn Vineyards cabernet barrels with an 11-year-old bourbon finished in black strap rum casks and LBV port pipes.
The blend was worked on for almost a year before the final version was settled.
Candied raisins, molasses and a hint of anise lead on the nose. The palate brings cane sugar, molasses and dark cherries, with barrel char and toasted marshmallow. The finish opens with pepper and some heat, then sweet sugar, marshmallow and dark fruit, long and warming.
