Rickhouse Proof is a Missouri bourbon from Holladay Distillery in Weston. It is aged for a minimum of six years and bottled at barrel strength, at around 60%.
The mashbill is 73% corn, 15% rye and 12% malted barley, distilled on an 18-inch Vendome column still. No water is added at bottling, so the strength shifts slightly from one batch to the next.
The nose offers toffee, brown sugar, vanilla and cinnamon. The palate is rich and creamy, with toffee, orchard fruit and baking spice, and the long finish carries cinnamon, black pepper and butterscotch.
