El Sol is a single malt from Callington Mill, distilled at Oatlands and bottled by the distillery itself in a 70cl bottle at 46%. It has natural colour and is not chill-filtered.
The whisky matures throughout in freshly emptied first-fill casks from Jerez, chosen from those that held Oloroso, Pedro Ximénez, Amontillado, Palo Cortado, Fino or Moscatel. Fruit, dessert notes, dark chocolate, coffee and a light touch of smoke make up its character.
On the nose, sweet orange peel and orange blossom lead, with smoky oak, sweet almonds, raisins and figs. The palate is dense and viscous, with spiced dark chocolate, cola, honeycomb and stone fruit. The finish is long, with sweet espresso, plum and dried fruit.
