Callington Mill – Pedro Ximénez Tasmanian Single Malt Whisky (70cl, 46%)

Callington Mill Pedro Ximénez is a Tasmanian single malt from the Callington Mill Distillery in Oatlands, bottled at 46% in a 70cl bottle. The whisky is matured entirely in Pedro Ximénez casks, which give it a deep mahogany colour and a sweet, concentrated fruitiness. The distillery uses locally malted barley and water from the Blackman River. The nose offers ripe raisins, dates and dark figs, with a little liquid honey. The palate is oily and viscous, with dark chocolate, roasted coffee and creamy honey. The finish is long, with notes of sun-dried grapes.
