Callington Mill Pedro Ximénez Tasmanian Single Malt (70cl, 46%)

Callington Mill Pedro Ximénez is a Tasmanian single malt matured entirely in first-fill Pedro Ximénez casks, emptied and still damp when filled. It is bottled at 46% in a 70cl bottle, with natural colour and without chill-filtration. The casks give raisins, dates and figs, followed by dark chocolate, coffee and honey. In 2025 it was named Whisky of the Year at the London Spirits Competition and won double gold and Best of Class at the San Francisco World Spirits Competition. The nose opens with honeycomb, caramel, vanilla and sweet plum, then toffee and toasted oak. The palate is soft and smooth with an oily texture: toffee, chocolate, cinnamon, fig jam, Asian spices and charred oak. The finish is sweet, recalling caramel pastry, fig and lightly toasted nuts.
