Callington Mill – Single Malt Oloroso Sherry Casks (70cl, 46%)

This is a five-year-old Tasmanian single malt from the Callington Mill distillery in Oatlands, bottled at 46% in a 70cl bottle. It matures entirely in first-fill ex-Oloroso sherry casks from southern Spain, used while still wet, and the cool Tasmanian highland climate shapes the maturation. It has natural colour and is not chill-filtered. Walnuts and hazelnuts set a nutty base, with figs, plums and raisins, dark toffee, spice and oak. The nose combines vanilla, toasted marshmallow and milk-bottle sweets with dried herbs, Christmas spices and clear oak. The palate brings buttered popcorn and dried fruit with steady oak and a velvety texture. The long, warming finish stays herbal, with bitter dark chocolate, charred tobacco and roasted oak.
