Callington Mill Solera Single Malt (70cl, 46%)

Callington Mill Solera Single Malt is a Tasmanian single malt made with the distillery's own adaptation of the Spanish solera principle. For each bottling a portion is drawn from all 14 cask positions, and what is removed is replaced step by step with whisky from another cask, the last addition being younger matured whisky. The positions include Tokay, Australian port, Amontillado, Palo Cortado, Madeira, Moscatel, Cognac, tawny and several bourbon casks. It is bottled at 46% ABV in a 70cl bottle, non-chill-filtered and without added colour. Orange blossom, mandarin peel, marzipan and charred oak lead the nose. The palate is lively and smooth, with bitter orange, smoky oak, vanilla and a creamy, buttery texture. The long finish brings mandarin peel, oak and honeycomb, both sweet and dry, ending with a light tingle.
