This is an 11 year old Caol Ila single malt from the 2024 Special Release, bottled at cask strength.
Unusually for the distillery, it is unpeated. It was made with a short fermentation and cloudy worts, and some of the stills were filled right up to increase copper contact. It was matured in refill and rejuvenated wine casks made from American and European oak.
The nose is gentle, with cream cheese, milk, peanut, raspberry and fruit; a few drops of water bring out sweetness. The palate is creamy and nutty, with soft tannins and oak spice. The finish is long and nutty, dry with a little warm spice.
