This is a 12 year old Caol Ila, distilled in 2013 and bottled in 2025 by Signatory Vintage at 54.5% ABV. It comes in a 70cl bottle and was matured in a first-fill Oloroso sherry butt.
It belongs to the Plume range, created in 2017 by Signatory Vintage in collaboration with La Maison du Whisky and reserved for whiskies aged in first-fill sherry casks. Caol Ila was founded in 1846 on the island of Islay.
Peat and sherry sit in equal balance here. The aromas and flavours are described as earthy, smoky, iodine-like, fruity, chocolatey and floral.
