This is a 25 year old Caol Ila from Islay, distilled in 1995 and selected as a Wilson & Morgan Barrel Selection. It matured fully in sherry wood, in a second fill cask, and is bottled at 59.8% in a 70cl bottle.
The second fill cask keeps the sherry from overwhelming the peated malt, though the influence of the wine remains strong.
The nose is dark, leathery and oaky, with slightly musty notes. The palate is dry, nutty and tarry, with mint, camphor, eucalyptus and unsweetened liquorice, kept fresh by orange peel. Water helps it open up.
