Cazcanes No. 9 is an unaged blanco tequila, made from 100% Weber Blue Agave in the Los Valles region of Jalisco, Mexico. It is certified organic and verified additive-free.
The agave is cooked in a low-pressure autoclave over 24 hours and pressed through a roller mill. The spirit is distilled twice in stainless steel pot stills with copper coils, then rested in stainless steel vats for one to three months. Natural volcanic spring water from the Navichi Springs is used for each production run.
The nose shows cooked agave, wet stone, cinnamon, clove and orange peel. On the palate there is green agave, black pepper, anise, baked pineapple and grapefruit, with a long, earthy finish of cardamom and pepper.
