Cedar Ridge Barrel Proof Bourbon is a non-chill-filtered bourbon from Cedar Ridge Distillery in Swisher, Iowa, bottled at 58% ABV in a 750ml bottle.
The mashbill is 74% corn, 14% malted rye and 12% malted barley. It is aged in char #3 American oak barrels in rickhouses without climate control, so the whiskey goes through Iowa's wide seasonal swings in temperature.
Cherry and vanilla lead the nose, with brown sugar, nutmeg and a caramel-oak base. The palate brings spiced brown sugar, maple and dark cherry, then oak char and warm rye spice. The finish is long and warming, with charred wood and caramel.
