A straight bourbon whiskey made entirely at Cedar Ridge Distillery in Swisher, Iowa, and bottled at 43% ABV in a 75cl bottle.
The mashbill is 74% corn, 14% malted rye and 12% two-row malted barley, all from Iowa. The grain is lautered off once conversion is complete and the wort is cooled quickly before fermentation. The spirit is distilled to about 148 proof and aged in new charred oak.
The nose is fresh-milled corn and roasted grain with vanilla, brown sugar and marzipan. The palate is soft and creamy, with vanilla custard, caramelised brown sugar and gentle rye pepper. The finish is medium to short, with toasted corn and a little vanilla.
