Charles Goodnight Bourbon is a barrel-proof Texas bourbon, bottled at 57.5% in a 750ml bottle. It is triple distilled in a copper-lined Vendome pot still with no column still spirit, from a mashbill of 60% Texas-grown yellow corn, 36% unmalted rye and 4% barley.
It matures in new charred American oak barrels, where the Texas heat draws caramel and oak from the wood.
The nose brings popcorn, toasted bread, candied apple and vanilla, with coconut and almond beneath. Gingerbread, apricot, peach, maple, dark chocolate and hickory smoke show on the palate. The finish is long and warming, with dried fig, caramel and charred oak.
