This is a single barrel rye whiskey from Koval, bottled at 50% in a 50cl bottle. The tags give American oak as the wood. Koval is a Chicago distillery founded in 2008 by Robert and Sonat Birnecker, who left academic careers to run it. Robert carried on the distilling tradition he learned from his Austrian grandfather. The name is Yiddish for black sheep. The distillery works from organic, sustainably grown grain from the region, mostly unmalted and often of unusual varieties, and carries out every step itself from grain to bottle.
