Koval Maple Syrup Cask Finish Rye is an American rye whiskey from Koval Distillery in Chicago, bottled at 50% ABV in a 750ml bottle. It is a limited edition.
The whiskey is distilled from 100% organic rye, taking only the heart of each run, and then spends additional time in casks that previously held maple syrup. Koval was founded in 2008.
Cinnamon, baking spice, tart cherry and maple lead the nose, with molasses and toasted rye bread. The palate is maple-sweet, like cinnamon French toast, with rye spice and tart fruit. The finish is long and creamy, with chai, warm spice and a little maple.
