Koval Bottled in Bond Rye is an American rye whiskey distilled in Chicago, Illinois, from 100% organic rye grain. It is bottled at 50% (100 proof) in a 75cl bottle.
Only the middle cut of the distillate is collected. The whiskey is aged in 30-gallon new charred American oak barrels, about half the size of the usual 53-gallon barrel. As a Bottled in Bond whiskey, it comes from a single distiller, distillery and season, and is aged for at least four years in a bonded warehouse.
Tasting notes describe caramel, vanilla, cinnamon, ginger and black pepper on the nose. The palate is grain-forward and spicy, with a warm oak sweetness, and the finish is dry, with toasted grain and baking spice.
