Koval Single Barrel Bourbon Finished in Jackfruit Barrels (75cl, 47%)

This is a single barrel bourbon from Koval Distillery in Chicago, bottled at 47% in a 75cl bottle. It is finished in jackfruit wood barrels. Koval makes its whiskey from organic grains, and the bourbon's mashbill is 51% corn and 49% millet. It is distilled on a custom-built Kothe pot still and aged in 30-gallon new charred American oak barrels before the jackfruit finish. The nose is tart tropical fruit with black pepper, melted butter, mango chutney and fresh bread. The palate is sweet, with ripe stone fruit, vanilla, apricot preserves and peppered caramel, and a creamy texture from the millet. The finish is medium, with apricot skin, mild spice and a faint tropical echo.
