Chateau de Fargues 1997 Sauternes is a sweet wine from the Bordeaux region of France, made from late-harvested grapes affected by Botrytis cinerea. The 1997 vintage is regarded as exceptional for Sauternes, and the wine shows candied fruit, acacia honey, dried apricot, ginger and vanilla on the nose. On the palate it balances sweetness with freshness, with a rich range of flavours echoing the nose and a pleasantly lingering finish. It suits foie gras, blue cheeses and fruit-based desserts, and can age for decades under suitable storage conditions.
