Chicago Spirit Bourbon is a wheated bourbon made by Chicagoland Spirits, Inc., a CelloVia brand, and bottled in a 1 litre format. The mashbill is 75% corn, 20% wheat and 5% rye.
It blends Midwestern corn distillate with wheat distillate from Italy. The spirit is aged in American white oak barrels from Minnesota, built with a medium toast head and #3 char. The staves have cross-cut grooves that expose more of the wood to the spirit, and the producer says the bourbon tastes older than its time in barrel.
The nose is toasted caramel and soft vanilla with a little baking spice. The palate is full-bodied and creamy, with toffee and butterscotch. The finish is medium, with warm oak and caramel.
