This is an XO Calvados from Christian Drouin, made entirely in the Pays d'Auge in Normandy. It is produced from a blend of bitter, bitter-sweet, sweet and sharp cider apples and double-distilled in traditional copper stills.
The spirit then matures in small, previously used casks, including ex-Bordeaux, ex-sherry and ex-Cognac, which add spice and complexity to the apple character.
Gold in colour, it opens with baked apple, almond, ginger and spice. The palate is supple, ample and smooth, starting with fruit before moving towards vanilla and a more woody character.
