Cierto Private Collection Extra Añejo Tequila (75cl)

Cierto Private Collection Extra Añejo is an additive-free tequila from NOM 1146 in Amatitán, Jalisco, made from organic Blue Weber agave by the Fonseca family, who grow the agave and distil it themselves. It spends 48 months in French Limousin oak casks, four years against 18 months for the Añejo in the same range. That time gives it a cognac-like warmth, with the oak kept finely restrained. The flavours run to caramel, cherries and dark chocolate, with a little tobacco depth. It is delicate and elegant, with an excellent texture, and it finishes on honey and spice.
