An 11-year-old single cask rum from Australia, distilled in 2007 and bottled in 2019. Made from molasses, it is limited to 425 bottles. The nose is expressive and exuberant, with black candied cherries, a hint of marinated wine, marc and cumin. The palate opens with marked spice aromas, then subtler notes of ripe fruit and fruit brandies. The finish is animal and earthy with a hint of gentian spirit, giving a robust character.
