Cotswolds Peated Cask Single Malt (59.6%)

Cotswolds Peated Cask is a single malt from the Cotswolds Distillery, matured in ex-peated quarter casks, which are much smaller than standard whisky casks. The spirit is made from floor-malted Odyssey barley with Anchor and Fermentis yeasts. The casks lend a subtle smokiness, more the scent of a distant open fire than a burning one right under the nose. This batch comes to 1,600 bottles, bottled at 59.6%. The nose has toffee, toasted sesame seeds, cinnamon sticks and raisins. The palate shows apricot, apple and peach, then soft hints of sea salt and cedar. The finish brings honeyed malt, floral barley and a last fleeting touch of spicy smoke.
