Cotswolds Signature Single Malt Whisky (70cl, 46%)

Cotswolds Signature is the flagship single malt of Cotswolds Distillery and the first whisky produced in the Cotswolds region of England. The distillery began making whisky in 2014 and released its first bottles in 2017. This one is bottled at 46% ABV in a 70cl bottle. It is made only from barley grown locally in the Cotswolds and floor malted. Fermentation lasts about 92 hours, and the spirit is distilled twice in copper stills. Maturation combines first-fill bourbon barrels with STR red wine barrels, which have been shaved, toasted and re-charred. The bourbon casks add vanilla, honey and caramel, while the STR casks bring red fruit, spice and molasses.
