Cotswolds – Whisky Sherry Cask

An English whisky from the Cotswolds Distillery, which opened in 2014. It is distilled from locally grown barley, and is not coloured or chill-filtered. The whisky matured in a combination of American and Spanish oak casks and butts seasoned with Oloroso and Pedro Ximénez sherry. The nose is toasted, lightly scorched fruit cake with stewed spiced apple, brown sugar and candied ginger. On the palate come flamed orange peel, fruity and nutty dark chocolate, cherry jam and a hint of vanilla ice cream. The finish has black pepper set against plenty of dried berries.
