Daftmill Single Malt Scotch is a Lowland single malt from the Cuthbert family's farm distillery in Fife, founded in 2005. Francis Cuthbert distils only in the quiet windows of midsummer and winter. It comes in a 70cl bottle at 46% ABV, non-chill-filtered and of natural colour.
The spirit was distilled from Publican barley grown in the farm's 43ac field and harvested in August 2009, then matured in first-fill ex-bourbon barrels from the Clermont Springs distillery in Kentucky.
The nose is soft and grain-led, with buttered cinnamon toast, banana bread and spring flowers. The palate is silky and oily, with Golden Delicious apple, custard, lemon curd and honeyed malt. The finish is medium and refreshing, with sweet cereal and buttery oak.
