Dalmore – 12 Years Old Sherry Cask Select (70cl, 43%)

This is a 12 year old Dalmore single malt from the Highlands, bottled at 43% in a 70cl bottle. It is a different release from the usual Dalmore 12 Year Old. The whisky spent about ten years in ex-bourbon casks, then about 24 months in American and European casks from three Andalucian cooperages. These bring the influence of several sherries, including Oloroso and Pedro Ximénez. The producer describes caramelised orange, ginger and sultanas with honey on the nose, then dark chocolate, crushed almonds and cinnamon on the palate. The finish is sweet mango, pannacotta and lemon sponge cake.
