Del Maguey Chichicapa is an unaged (joven) mezcal from the Single Village Mezcal series, made in the village of San Baltazar Chichicapam in Oaxaca. It is bottled at 48% ABV.
It is made from 100% Espadín agave, harvested after about 7 to 8 years. The piñas are roasted in earthen pits over wood fires, crushed with a stone tahona, fermented naturally in open wooden vats and double distilled in small copper pot stills.
The nose brings roasted agave, smoke, grilled pineapple, citrus peel and herbs. The palate is full and complex, with mango, banana, cooked agave, citrus, almond and caramel, balanced by smoke.
