Dingle Grianstad an Tsamhraidh Single Pot Still (70cl, 52.5%)

This is a triple-distilled single pot still whiskey from Dingle, released in the Wheel of the Year series as a edition for the summer solstice. Grianstad an Tsamhraidh is the Irish name for that day. It is made from malted and unmalted barley and bottled without added colouring and without chill filtration. The whiskey matured first in Bourbon casks and was then finished in former rye whiskey casks, which add pepper, aniseed and dry grain spice. The nose shows sun-dried hay, lemon and creamy toffee, with black pepper, oak and vanilla. On the palate come honey and brown sugar, aniseed, roasted Brazil nut and lemon, with a pronounced rye spice. The finish is long, peppery and shaped by oak.
