This is the fifth batch of single malt from Dingle Distillery in Ireland. It is triple distilled and matured in a marriage of ex-bourbon, Pedro Ximenez sherry and Madeira wine casks. It is bottled at 46.5% ABV in a 75cl bottle.
The nose brings crème brulee, salted caramel and honeycomb, with dried fruit, chocolate peanuts, nutmeg and ginger developing. On the palate come honeycomb, malt and vanilla, leading into soft oak warmth, with raspberry and cherry growing in the background and cinnamon appearing later. The finish recalls Mars Bars and oatcakes, with a dry cedar spiciness.
