Dingle Single Malt Irish Whiskey (70cl, 46.5%)

This is a triple-distilled single malt from Dingle Distillery in County Kerry, on Ireland's west coast. It is made only from malted barley and bottled without added colouring and without chill filtration. The whisky matured in Bourbon, Oloroso sherry and Pedro Ximénez sherry casks. The Bourbon casks bring vanilla, caramel and fresh citrus, Oloroso adds dry fruit and spice, and Pedro Ximénez gives a darker sweetness. The nose opens with fresh lime and cool mint, followed by vanilla, soft caramel and malt. On the palate come juicy apple and ripe raspberry with creamy vanilla and gentle malty spice. The finish is medium to long, with honey, soft fruit, caramel and a little dry oak.
