Dingle – Single Pot Still Batch 5 (70cl, 46.5%)

This is the fifth and final release in Dingle Distillery's small batch single pot still series. It is an Irish whiskey, triple distilled, matured entirely in bourbon casks and bottled at 46.5% in a 70cl bottle. It is described as rich and smooth, with dried raspberries and butter mints giving way to white chocolate and flaked almonds, then the soft wood and leather spice associated with Dingle. The nose is sherbet, seaside rock, ice cream soda, coconut, salted caramel and freshly baked cinnamon bagels. On the palate come flaked almonds, crystallised ginger, freeze dried raspberries, butter mints, white chocolate and marzipan. The finish is warm and soothing, with herbal pot still spice.
