Gilbert Signature is a single malt from the Castan distillery in Occitanie, made as a tribute to its founder, Gilbert Castan. It is a blend of historic casks chosen from the distillery's best signatures and aged in its own cellars, in French oak that previously held red wine. It is bottled at 48% in a 70cl bottle. The nose brings vanilla, fruit, including Ente plum, and a note of iodine. The finish is pleasantly toasted, with a touch of salinity.
