Distillery 291 – 3 Year Old Batch 3 (That Boutique-y Whisky Company) (50cl, 67.8%)

This is Batch 3 of Distillery 291's straight rye, a 3 year old from Colorado Springs, chosen by That Boutique-y Whisky Company from a single cask. It is bottled at 67.8% ABV in a 50cl bottle, non-chill-filtered and without added colour. The outturn is 295 bottles. The mash was 100% German rye malt, soured in open fermenters and distilled three times in pot stills made at the distillery. The rye matured for three years in new, heavily charred American white oak, with a finish using aspen staves from land near the distillery. The nose has spicy rye malt, toasted rye bread, herbs and a light floral note, with blackberry leaf, clove and a hint of gingerbread. The palate opens with strong spice, then toasted rye bread, nutty grain and bitter chocolate. The finish is long and chocolatey, with the spice returning.
