Doc Holliday 8 Year Old is a single barrel Kentucky straight bourbon from the World Whiskey Society, bottled at cask strength without dilution. It was introduced in August 2025 as one of the brand's first cask finished releases, timed to Doc Holliday's birthday.
The bourbon was distilled in Clermont, Kentucky, to a mashbill of 78% corn, 13% rye and 9% malted barley. It spent seven years maturing in Kentucky and one in Georgia in new American oak with a number 3 char, then was finished in a 500 litre Oloroso sherry cask.
The nose offers caramel, dried figs and toasted oak. The palate brings brown sugar, roasted nuts, dark chocolate and baking spice, and the finish is long, with caramelised sugar, toasted almonds and dried fruit.
