Eau Claire Distillery – Single Malt Whisky Batch 8 (75cl)

Eau Claire Batch 8 is a Canadian single malt made in small batches in Turner Valley, Alberta. The distillery raises its own barley from seed, using horse farming alongside modern craft distilling. This batch was aged separately in ex-bourbon and Oloroso sherry casks, then brought together, balancing a fresh grain sweetness with the depth of sherry wood. The nose brings warm barley malt, honeycomb and baked apple, with oak, vanilla and raisins. The palate is smooth, with sweet malt, toffee and orchard fruit, then vanilla bean, dried fruit and gentle cinnamon, nutmeg and white pepper. The finish is medium to long, with honeyed grain, toasted coconut, walnut and cocoa.
