Egiazki Zabala Vermouth Rouge

Egiazki Zabala is a red vermouth made by hand in the Basque Country. It starts from a local red wine, macerated with a selection of plants, spices and aromatics, then cold-infused and blended without artificial colouring or excess sugar. The dosage stays moderate. The nose is led by fresh herbs, roots and citrus peel, with a touch of herbal bitterness. The palate is round, opening on slightly tart red fruit before herbs, light bitterness and soft spice arrive. The finish is long, with vegetal bitterness, dried herbs and an echo of ripe red fruit. It can be served chilled, neat or with light tonic, or used in a Negroni or Boulevardier.
