Elijah Craig Barrel Proof Batch B525 is a Kentucky straight bourbon from Heaven Hill Distillery in Bardstown. It is the second release of 2025, aged 11 years and 6 months and bottled at full barrel strength of 63.1% ABV, uncut and non-chill filtered.
The mash bill is about 78% corn, 10% rye and 12% malted barley.
The nose combines caramel, butterscotch, toasted oak and dried dark fruits such as plums and cherries. The palate is full-bodied, with brown sugar, maple syrup, vanilla and dark chocolate, while rye pepper gives structure. The finish is long and warming, with oak tannin and spicy pepper.
