This is a pear liqueur from François Peyrot, made in the Grande Champagne area of Cognac. Eaux-de-vie from the Peyrot estate are blended with a distillate or maceration of ripe Williams pears, then aged for about two years in white oak barrels so the fruit and the Cognac settle together.
The nose is fresh Williams pear with a little vanilla and honey, and a faint note of oak. The palate is silky, with ripe pear leading into light toffee and almond skin, while the Cognac adds gentle wood spice. The finish is of medium length, with pear lingering alongside dry oak and mellow spice.
