George Dickel 8 Year Old is a Tennessee bourbon, bottled at 45% ABV (90 proof) in a 750ml bottle. It is made at Cascade Hollow Distilling Co. in Tullahoma from a mashbill of 84% corn, 8% rye and 8% malted barley.
The whiskey is chilled to about 40°F and passed through sugar maple charcoal, a variation on the Lincoln County Process, then matures for eight years in new charred oak barrels.
The nose brings caramel corn, maple sugar, toasted pecans, butterscotch and cherry tart. The palate is soft and sweet, with vanilla, almond toffee, cherry, orange, honey and a cooling touch of spearmint. The finish is long, with baking spice, leather and espresso.
