George Dickel Original No. 8 is a Tennessee whisky from Cascade Hollow Distilling Co. in Tullahoma, bottled at 40% ABV in a 75cl bottle. It is made by a sour mash process from a mashbill of 84% corn, 8% rye and 8% malted barley.
The distillate is chilled to 40°F before it passes through sugar maple charcoal, a variation on the Lincoln County Process.
The nose has green apple, light caramel, honey, cinnamon and maple sugar. The palate is soft, with buttered corn, vanilla, hazelnut and caramel. The finish is medium, lightly smoky, with maple, leather and baking spice, ending clean and dry.
