Barolo DOCG 2021 from Giacomo Grimaldi is a composed and expressive Nebbiolo. It shows mature cherry, dried rose and light earthy notes, with sweet spice defining its aristocratic character. The palate is dry and vertical, with present but polished tannins, lively acidity and good length.
It is suited to structured meat dishes, braises and aged cheeses. Serve around 16-18 C. Open at least an hour ahead if served young, or leave in the cellar for some years to appreciate its full complexity.
