Giuseppe Quintarelli Recioto della Valpolicella Classico 2007 (75cl, 15.5%)

Giuseppe Quintarelli Recioto della Valpolicella Classico 2007 is a sweet red wine from Negrar, in the heart of Valpolicella. The estate grows Corvina, Corvinone and Rondinella, with small amounts of other local varieties. The grapes are selected from the ripest upper parts of the bunches and dried on wooden boxes or rush mats. Noble rot appears from November, and the grapes are pressed at the end of January. Fermentation with indigenous yeasts lasts 45 days, and the wine then ages for five to six years in Slavonian oak barrels. It is made with significant residual sugar and is bottled at 15.5% vol.
