Evolution is a Glenglassaugh single malt matured entirely in first-fill casks that previously held Tennessee whiskey. It is bottled at 50%, with natural colour and without chill-filtering.
In the glass it is a crisp harvest gold. The nose is sweet, with barley, pineapple, buttery vanilla and Scottish fudge, then caramelised pear, Golden Delicious apple, coconut and deeper oak spices. The palate is creamy and sweet, with white peppery oak, green apple, cracked barley, salted caramel, ripe banana and a little aniseed.
The finish is soft and rounded, with oak spices, delicate fruit, coconut, vanilla pod and a touch of liquorice.
