A ten-year-old Japanese whisky matured in sherry casks, distilled in Fukuoka at the Hikari Distillery, which was founded in 1912. It comes in a 70cl bottle.
The mash is 100% barley, and a portion of it is fermented with koji. The sherry casks rest in traditional warehouses and a few open-air ones, where they meet summer heat of around 95 °F and winter lows near 38 °F.
The nose is lemon meringue, strawberry preserves, old oak and earthy notes. Rich sherry, walnuts and sweet raspberries lead the palate, and the very long finish brings vanilla oak, more sherry, raisin and orange peel.
