High Coast Distillery – 63

High Coast Distillery 63 is a single malt whisky from High Coast Distillery in Norrland. It matures in large, unheated warehouses, where the temperature can drop to 30 degrees below zero in winter and climb almost 70 degrees higher on hot summer days. When it is warm, the pressure inside the barrels rises and the whisky expands and penetrates further into the oak. When the temperature and pressure fall again, the oak's flavours are released. The distillery says this daily and seasonal cycle accelerates parts of the maturation.
