High Coast Distillery – 63 Single Malt Whisky

A single malt whisky from High Coast Distillery in Norrland, Sweden. The whisky matures in large, unheated warehouses, where the temperature swings sharply between summer and winter and between day and night. A cold winter can reach 30 degrees below zero, while hot summer days can be almost 70 degrees warmer. In the heat the pressure in the barrels rises and the whisky expands deeper into the oak; as the temperature falls, the oak's flavours come back out. The distillery says these constant changes speed up parts of the maturation and shape a distinctive flavour.
